The aromatic profile of Trigonella caerulea (blue fenugreek) develops predominantly after harvest, yet its detailed chemical characterization has long been limited by analytical challenges associated with highly volatile and low-abundance compounds. In this study, conventional GC–MS headspace analysis was complemented by high-resolution GC–MS employing cyanopropyl-functionalized stationary phases to improve compound separation and identification.

While standard GC–MS enabled the detection of major volatile aldehydes and monoterpenoids, high-resolution GC–MS proved essential for resolving co-eluting compounds and identifying very volatile aroma constituents with greater confidence. In parallel, non-volatile α-keto acids were quantified by LC–MS to provide a comprehensive view of aroma precursors.

Comparative analysis demonstrates that high-resolution GC–MS significantly enhances analytical depth and accuracy, allowing a more complete understanding of aroma formation dynamics during drying and storage. These results underline the critical role of advanced chromatographic techniques in elucidating complex herbal aroma systems.
