In this blog, we explore a comprehensive <strong>GC-MS/MS</strong> workflow specifically designed for <strong>PAH analysis in smoke-flavored foods</strong>, with a focus on innovation in <strong>sample preparation, instrumental sensitivity,</strong> and <strong>regulatory compliance</strong>.</p><h3 id="h-understanding-smoke-flavors-and-pahs"><strong>Understanding smoke flavors and PAHs</strong></h3><p>Smoke flavorings are derived from the controlled combustion of specific wood types, which are subsequently condensed, fractionated, and purified. These flavorings are used in foods such as fish, meat, sauces, and even snacks to replicate traditional smoking processes. <strong>The primary flavoring components</strong> include <strong>phenols </strong>and <strong>carbonyl compounds</strong> (aldehydes and ketones).</p><p>However,<strong> </strong>PAHs can also be introduced during this process.
